Baked Oatmeal by Heidi Swanson

2 cups rolled oats
1/2 cup cashew pieces toasted
1 teaspoon aluminum free baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon sea salt
2 cups your choice of milk, I’ve used water too
1/3 cup maple syrup
1 large egg
3 tablespoons melted (cooled a bit) butter
2 teaspoons pure vanilla extract
2-3 ripe bananas
1 1/2 cup of berries (can use frozen)
Option: I add 1/2 cup chocolate chips
Preheat the over to 375 degrees. Butter the inside of an 8 inch square baking dish.
In a bowl, mix together all the dry ingredients and set aside.
In another bowl whisk all the wet ingredients together.
Arrange bananas in a single layer a the bottom of the prepared baking dish. Sprinkle two-thirds of the berries over the top. Cover the fruit with the oat mixture. Drizzle the milk mixture over the oats. Make sure the milk moves through the oats. Top with remaining berries!
Bake for 35-45 min.
